One of the most important problems of mankind is the protection of agrarian ecological systems from the negative impact of scientific and technical progress of intensification and chemical protection of agriculture, chemical pollution of the environment, which causes the accumulation of various toxic substances, especially nitrites in plant products. It is known that the intake of nitrates in large quantities can cause various disturbances in the functional state of the organism. As a result of the organization and carrying out of the research project on the topic: «Nitrates and nitrites in plant foods» a comparative analysis of nitrates and nitrites in food products was conducted, and culinary technologies were also developed to reduce their content. Development and implementation of innovative methods in the field of environmental education is essential for promoting sustainable development
